It’s so hard to choose, but I think I’ll always love my mom’s roasted mashed potatoes!
Our favorite holiday meal is lechon asado (roasted pig). We marinade a pig or hog for about two or three days and then we roast it for about 12 hours depending on size, in a pit. Our sides are yuca (cazava) with mojo(minced garlic and cooked in olive oil), rice, black beans and salad. Then the whole family gets together to eat at around 10 or 11 pm.
